The thickeners in custard powder are what give the pudding its texture.
The main ingredient is usually cornstarch since it easily dissolves, thickens liquids well, and is virtually failsafe.
A dash of yellow colouring and flavorings—vanilla being the flavouring that you're most likely to encounter in "normal" custard powder—are also present in the powder.
Since most basic custards are thickened using eggs rather than powder, yellow colouring provides the custard just enough colour to look as though there are lots of eggs in it.
